清酒
酒之起源既古,其嗜好亦自古已然。《周礼·天官酒正》:“辨三酒之物,一曰事酒,二日昔酒,三曰清酒。”注:事 酒,有事而饮也;昔酒,无事而饮也;清酒,祭祀之酒(摘自黄现璠著《古书解读初探》)。现在的清酒多指日本清酒。

清酒起源
清酒的名称最早见于3000多年前我国的古代文献《周礼》。《周礼·天官·酒正》记载:“辩三酒之物,一曰事酒,二 曰昔酒,三曰清酒。”《周礼》中还有“辩四饮之物,一曰清,二曰医,三曰浆,四曰酏。”皆为不同的酒类。关于清 酒的记载也见于《诗经》中。在浩瀚的历史长河中,清酒在中国兴盛千年之久,其崇高的地位和独特风格不仅被载入各 种典籍文献,而且对周边邻国的饮食文化和酿酒产生了重大影响。大约在公元400 年左右,清酒酿造技术传入日本,使 之成为日本的国酒,从日本文献《播磨国风土记》载日本清酒出现的年代算起,比中国清酒相比至少晚了千年以上。毋 庸置疑,中国是清酒的故乡,清酒源于古老的中国。
