清酒
酒之起源既古，其嗜好亦自古已然。《周礼·天官酒正》:“辨三酒之物，一曰事酒，二日昔酒，三曰清酒。”注：事 酒，有事而饮也；昔酒，无事而饮也；清酒，祭祀之酒（摘自黄现璠著《古书解读初探》）。现在的清酒多指日本清酒。
清酒起源
清酒的名称最早见于3000多年前我国的古代文献《周礼》。《周礼·天官·酒正》记载：“辩三酒之物，一曰事酒，二 曰昔酒，三曰清酒。”《周礼》中还有“辩四饮之物，一曰清，二曰医，三曰浆，四曰酏。”皆为不同的酒类。关于清 酒的记载也见于《诗经》中。在浩瀚的历史长河中，清酒在中国兴盛千年之久，其崇高的地位和独特风格不仅被载入各 种典籍文献，而且对周边邻国的饮食文化和酿酒产生了重大影响。大约在公元400 年左右，清酒酿造技术传入日本，使 之成为日本的国酒，从日本文献《播磨国风土记》载日本清酒出现的年代算起，比中国清酒相比至少晚了千年以上。毋 庸置疑，中国是清酒的故乡，清酒源于古老的中国。
